- 1/2 cup mayonnaise
- 1 tbsp Dijon or yellow mustard
- 1 tbsp chipotle peppers
- 1/2 tbsp lemon juice
- 1 tsp white vinegar
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1/4 tsp salt
For the Patty Melt
- 1 lb ground beef (80/20 for flavor)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 4 slices Monterey Jack cheese
- 1/2 large onion, sliced
- 4 slices Texas toast
- 1-2 tbsp butter
Additional
- To make the sauce, combine the ingredients in a small bowl and refrigerate for 15 minutes to allow the flavours to meld.
- Sliced onions should be cooked in 1 tablespoon butter for 7 to 10 minutes, or until they are brown and caramelised.
- To make the patties, cut it into two equal pieces, season with salt and pepper, and cook for three to four minutes on each side, or until browned.
- Assemble the sandwich using one slice of bread, one patty, grilled onions, two Monterey Jack slices, creamy pepper sauce, and a second slice of bread on top.
